Lunch-time Delight: Basil-Mayo Chicken Pita


Okay, here's my 3rd healthy lunch recipe... I'm actually pretty impressed with myself for sticking to this healthy lunch thin. Maybe I'll make it permanent. Eat rotten food all-day, but then opt for a well-balanced lunch :P <-- that just sounds horrible.

Anywho... the recipe goes like this. Take your favourite brand pita pocket and cut it in half. Slather on some good home-made basil mayonnaise (recipe to follow) and then line the pita with romaine lettuce. Add in some grilled chicken, chopped up into nice thin strips. Eat your pita and enjoy.


Basil Mayonnaise

Ingredients:
- 5 stalks of basil, finely chopped
- 2 tsp garlic, minced
- 1 cup mayonaisse
- 1 tsp freshly squeezed lemon juice

Method:
1. Whisk all ingredients together and enjoy.

Recommended: Make the mayonnaise at least 1 day ahead, that way the basil and garlic flavors will infuse into the mayonnaise... making it even more flavourful.
