To go along with my chicken pita, I decided to whip up some bruschetta. My family isn't a tomato loving one, but they're starting to warm up to it... thanks to this bruschetta recipe. It doesn't have a strong soury taste and the basil flavor is very mild and soothing. My family loved it on some good-old Cob's french bread, but I opted to eat mine with my favorite crackers... Stoned-Wheat Thins!

I used the recipe from Simply Recipes, it may seem complicated but it really isn't. Once you've parbroiled the tomatoes and chopped up the basil, you're good to go. You'll get tomato juice all over, but the end product will be worth your toils!
