Cherries!! Part 1

My family and I were just talking to the neighbours when someone noticed and stated, "You have a nice cherry tree." while pointing to our hideously overgrown tree next to the driveway. That may not seem to be a very profound statement, yet I was thoroughly surprised. My family had never picked cherries off this tree, and it had been in our possession for around 10 years. That's 10 whole summers that we've missed out on eating cherries... well we weren't going to stand for this, so we got picking. And the result... 4 buckets of beautifully ripe cherries. What were we to do? I couldn't imagine eating them all; even divided among the 5 of us we would have gotten sick of cherries really quickly. What to do???? Mom decided that she wanted to bake a cherry pie and add a deliciously simple crumble topping to it. Great idea... the pie turned out beautifully and it was really simple to make.

Cherry Pie

Ingredients:
Recipe yeilding one pie crust

Filling:
4 cups pitted cherries
1 cup sugar
1 1/2 tbsp cornstarch
Cook filling ingredients in a large pot over medium heat until thick. Remove from heat; add 1 package of gelatine, stir quickly.

Crumble:
3/4 cup rolled oats
1/3 cup flour
1/2 cup brown sugar (lightly packed)
Combine all ingredients and mix thoroughly. Slowly add 1/3 cup melted butter and mix until crumbly yet clumpy.

Pour filling into pie shell and cover with crumble topping. Place pie in oven set at 350F (gas) for 45-50 minutes.
